The Café de l’Esplanade collaborates with an ultra-confidential Italian restaurant

As Paris Fashion Week ended on Tuesday, October 5, the mythical Café de l’Esplanade invites the ultra-confidential Italian restaurant Cibus to offer a selection of signature dishes on the restaurant’s menu. A collaboration under the sign of excellence and sharing, to be discovered until October 18th.

When Italian cuisine meets French gastronomy, it always results in a most successful association. And when the mythical brasserie of the Café de l’Esplanade, which has become one of the most emblematic addresses in the capital for more than twenty years, meets Cibus, the ultra-confidential Italian restaurant on rue Molière, it is indeed a great success. On the occasion of Paris Fashion Week, the two establishments are collaborating to offer two new dishes on the menu of the Café de l’Esplanade. Entitled “Ciao Elio” (in reference to the name of chef Elio Bombace, at the origin of the Italian restaurant), this alliance was born from a chance meeting between the chef and the owner of the brasserie in the 7th arrondissement, Isabelle Saglio, while he was having lunch at the Café de l’Esplanade. The two then had the idea of bringing two new dishes to the menu, one focused on vegetables and the other focused on fish, bringing an Italian touch.

 

The Neapolitan chef was inspired by the recipes of his childhood to concoct these two new dishes : a turban of green vegetables with candied lemon (one of his favorite ingredients) and olive oil, as well as a sea bass with hammer accompanied by lemon caviar and bottarga. Two elaborate dishes with surprising flavors, which can be embellished with a side dish of your choice: mashed potatoes, homemade fries, extra thin green beans or Thai rice. For dessert, it is of course possible (and recommended)  to enjoy the little delicacies of the Café de l’Esplanade, such as a delicious French toast brioche with salted butter caramel or a melting chocolate tartlet.
